  • 1 teaspoon vegetable oil
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup vegetable oil

Steps

  1. In a large bowl combine the eggs with ¼ cup sugar, and beat until thick and lemon-colored.
  2. Add the oil.
  3. Combine 1 ½ cups of the flour, the baking powder, and the salt.
  4. Gradually add this to the egg mixture and beat well.
  5. Turn the dough out onto a floured board (use the remaining ½ cup flour) and knead thoroughly until the dough is smooth.
  6. Shape the dough into 16 balls.
  7. Roll each one into a circle about 5 inches (13 cm) in diameter.
  8. Let stand uncovered on waxed paper for about 10 minutes.
  9. Heat the oil in a deep frying pan to 350°F (175°C).
  10. Fry the dough circles until golden brown, turning once.
  11. Drain on paper towels.
  12. Combine the cinnamon and 1 cup sugar.
  13. Sprinkle the fried dough with the sugar/cinnamon mixture.
  14. Store in an airtight container.
