Ingredients
- 1 kg chicken pieces
- 4 medium plum tomatoes
- 2 tbsp tomato paste
- 200 g okra
- 1 large onion
- 4 cloves garlic
- 1 tbsp ginger
- 1 whole scotch bonnet
- 2 whole bay leaf
- 45 ml vegetable oil
- 1 whole lime
- 400 g white rice
Steps
- Season chicken pieces with salt, pepper, and grated ginger.
- In a heavy pot, sear chicken in vegetable oil until golden; remove.
- Cook chopped onion in the same oil until soft; add garlic and a chopped scotch bonnet.
- Stir in tomato paste and cook 3 minutes.
- Add blended plum tomatoes and a bay leaf; simmer 10 minutes.
- Return chicken to the pot with water to cover; simmer 30 minutes.
- Add sliced okra and cook 10 more minutes until okra thickens the broth slightly and chicken is tender.
- Taste for salt; serve in bowls over white rice with a squeeze of lime.
Tips
- Do not over-simmer the okra or the broth turns slimy. 10 minutes is the sweet spot.
- A knob of ginger stirred in fresh at the end brightens everything.
