Ingredients

  • 800 g lamb shoulder
  • 2 large onion
  • 150 g greek yogurt
  • 2 tomato
  • 4 large flatbread
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tsp oregano
  • 4 cloves garlic
  • 3 tbsp olive oil
  • 1 tsp sumac
  • 0.5 tsp red pepper flakes

Steps

  1. Thinly slice lamb, marinate with grated onion, garlic, cumin, paprika, oregano, pepper flakes, and olive oil for at least 2 hours.
  2. Stack marinated lamb slices tightly, press together; this mimics the traditional rotating spit technique.
  3. Cook in a very hot cast-iron skillet in batches, pressing down firmly, until edges are charred and crispy, about 4 minutes per side.
  4. Slice cooked lamb into thin strips with a sharp knife.
  5. Warm flatbreads, spread with yogurt, layer lamb, sliced tomato, onion, and a sprinkle of sumac.
  6. Roll tightly.
  7. Serve with pickled peppers on the side.
