Ingredients

  • to taste ogi water
  • to taste ripe pineapple
  • to taste lemongrass leaves
  • to taste lemons
  • to taste white sugar

Steps

  1. Combine the ogi water, pineapple, and lemongrass leaves in a pot.
  2. Simmer for at least 45 minutes.
  3. Remove from the heat and cool completely.
  4. Once cool, strain out the solids.
  5. Place the sugar in a pot.
  6. Slowly melt it over medium heat, stirring, and cook until it reaches a light brown caramel.
  7. Stir some hot water into the caramel to make a sauce—if you use cold water, it will crystallize.
  8. Set aside.
  9. Sweeten the strained liquid with the caramel sauce, and serve.
