- 45 ml olive oil
- 15 g parsley
- 1 tsp salt
- 1/2 tsp black pepper

- Mix the ground pork and beef with the soaked bread, egg, half the minced garlic, chopped parsley, salt, and pepper.

- Bloom saffron threads in 2 tablespoons of warm water.
- Heat the olive oil in a wide, deep pan over medium-high heat.
- Brown the meatballs in batches on all sides, about 4 minutes total.

- Pour in the wine and let it reduce by half.
- Add the crushed tomatoes and saffron with its liquid.
- Simmer 10 minutes.
- Return the meatballs to the sauce, cover, and simmer gently for 20 minutes until cooked through and the sauce has thickened.
- Scatter toasted pine nuts and fresh parsley over the top.
