Ingredients

  • 4 mackerel fillets
  • 4 crusty bread rolls
  • 1 large red onion
  • 4 leaves lettuce
  • 2 lemon
  • 1 tsp sumac
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp parsley

Steps

  1. Thinly slice red onion into rings, toss with sumac, a squeeze of lemon, and a pinch of salt; let sit 15 minutes to pickle.
  2. Season mackerel fillets with olive oil, salt, and pepper on both sides.
  3. Grill mackerel on a hot grill or griddle, skin-side down first, 3-4 minutes per side until skin is crispy and flesh flakes.
  4. Slice bread rolls open, lightly toast cut-side down on the grill for 30 seconds.
  5. Layer lettuce, grilled mackerel, sumac onions, and chopped parsley in each roll.
  6. Squeeze lemon juice generously over the filling and serve immediately while hot.
