Ingredients

  • 300 g split fava beans
  • 4 cloves garlic
  • 2 tsp cumin
  • 1 tsp paprika
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 0.25 tsp cayenne pepper
  • 4 slices bread

Steps

  1. Soak the split fava beans overnight.
  2. Drain and rinse the beans, then place in a pot with 1 liter of fresh water.
  3. Add the garlic cloves and bring to a boil.
  4. Simmer 40–45 minutes until the beans are completely falling apart.
  5. Blend the soup until smooth with an immersion blender.
  6. Adjust the consistency with water if too thick.
  7. Stir in the cumin, salt, cayenne, and lemon juice.
  8. Simmer 5 more minutes for the flavors to meld.
  9. Ladle into bowls and drizzle generously with olive oil.
  10. Dust with paprika and a pinch of cumin.
  11. Serve with crusty bread for dipping; this is classic Moroccan street food breakfast.
