Field of Dreams Guacamole

Mexican dish with cream cheese, packaged dry buttermilk salad dressing and seasoning mix, ripe avocados, halved, pitted, and peeled.

Ingredients

  • 4 ounces cream cheese
  • 1 teaspoon packaged dry buttermilk salad dressing and seasoning mix
  • 3 large ripe avocados
  • 3 tablespoons lime juice
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1 teaspoon red pepper sauce
  • ½ cup red onion
  • ½ cup prepared roasted red bell pepper
  • 1 red bell pepper
  • ½ cup low-fat sour cream
  • to taste thin wheat crackers

Steps

  1. In a bowl, blend the cream cheese and buttermilk seasoning.
  2. Place in plastic wrap, roll into a ball, and chill in the freezer for 1 hour or refrigerate overnight.
  3. In a bowl, coarsely mash the avocado with lime juice, garlic, salt, and red pepper sauce.
  4. Stir in the red onion and roasted bell pepper.
  5. Using a rubber spatula, scoop the guacamole onto a square plate.
  6. Spread out evenly, making a slight mound in the center to create a pitchers mound.
  7. Spoon the sour cream into a pastry bag with a fine tip, or a plastic bag with a ⅛-inch corner cut out.
  8. Pipe thin base lines onto the guacamole field.
  9. To create the red stitching for the baseball, cut the red bell pepper into 1 inch strips.
  10. Using a sharp knife, carefully remove the fleshy inside of the pepper, reserving the red shiny skin.
  11. Slice the skin into very thin strips to create stitch lines for the baseball.
  12. To make the baseball, remove the cream cheese from the freezer or refrigerator.
  13. Roll to make a round baseball shape.
  14. Remove the plastic wrap.
  15. Using a wooden pick, form the stitch lines on the ball.
  16. Use the very thin pieces of red bell pepper skin to lay over the stitch lines.
  17. Place the baseball on the mound in the center of the guacamole field.
  18. Use thin wheat crackers for the bases.
  19. Serve crackers, tortilla chips, and/or bell pepper strips as dippers.
