Ingredients

  • 500 g ground lamb
  • 1 large onion
  • 40 g flat-leaf parsley
  • 1 tsp allspice
  • 0.5 tsp cinnamon
  • 0.5 tsp black pepper
  • 1 tsp salt
  • 4 flatbread
  • 3 tbsp tahini
  • 1 lemon
  • 2 tomato
  • 50 g pickled turnip

Steps

  1. Finely mince onion and parsley by hand for the best texture; combine with ground lamb, allspice, cinnamon, pepper, and salt.
  2. Knead the mixture firmly for 3-4 minutes until it becomes paste-like and holds together well.
  3. Divide into 8 portions, mold each around a flat metal skewer into a long sausage shape about 15cm long.
  4. Grill over high heat, turning every 2 minutes, for 8-10 minutes total until charred on the outside but still juicy inside.
  5. Make tahini sauce: whisk tahini with lemon juice and water until smooth and pourable.
  6. Slide kafta off skewers onto warm flatbread, add sliced tomato, pickled turnip, and drizzle with tahini sauce.
