Ingredients
- 4 eggs
- 2 tbsp dashi stock
- 1 tbsp sugar
- 1 tsp soy sauce
- 1 tsp mirin
- 1 tbsp vegetable oil
Steps
- Whisk eggs gently with dashi, sugar, soy sauce, and mirin — avoid creating bubbles for a smooth texture.
- Heat a tamagoyaki pan over medium-low heat and brush with a thin layer of oil using a paper towel.
- Pour a thin layer of egg mixture and let it cook until just set on top but still slightly wet.
- Roll it to one side of the pan using chopsticks.
- Repeat 4-5 times: oil the pan, pour thin layer, lift the roll to let egg flow underneath, cook and roll again, building layers.
- Slice into pieces when cool.
